Since going Paleo my family has fallen even more in love with our grill. Paleo and grilling just work well together. The past couple of years I've even been stepping outside my grilling comfort zone more and more. Grilling things I'd never thought to have grilled before and trying new flavor combinations. I have to say I'm pretty thrilled with the results of most of my flavor experiments. In the past I'd never have thought to grill fruit, but it's amazing. Grilling fruit and adding it to traditionally savory dishes? Brilliant. Oh yes, and? New rule: every burger recipe for the rest of forever must contain grilled pineapple. Lately I've been craving pancakes. You can only eat so many eggs and dinner left-overs for breakfast! I've played with my protein pancake recipe and came up with this...
Protein Pancakes
1 egg (can sub with egg whites)
1/4 cup unsweetened almond or coconut milk (depending on your protein powder you may need to adjust this)
1 tsp baking powder
2 scoops of your favorite protein powder, I use vanilla whey protein.
Spray a skillet with cooking spray or grease with coconut oil and cook these over medium heat until golden brown on both sides.
Top with fresh fruit or some pasture butter. Yum!
To ensure these are gluten-free be sure you check labels on your protein powder and whatever milk you use. This recipe makes one serving for me, I usually make one great big pancake. You could also make 2-4 smaller pancakes and they'd flip easier. I've also added in a handful of blueberries or half a banana sliced...so good!
