Paleo Smoky Grilled Pineapple Burgers

Since going Paleo my family has fallen even more in love with our grill. Paleo and grilling just work well together. The past couple of years I've even been stepping outside my grilling comfort zone more and more. Grilling things I'd never thought to have grilled before and trying new flavor combinations. I have to say I'm pretty thrilled with the results of most of my flavor experiments.  In the past I'd never have thought to grill fruit, but it's amazing. Grilling fruit and adding it to traditionally savory dishes? Brilliant. Oh yes, and? New rule: every burger recipe for the rest of forever must contain grilled pineapple. OK, maybe more of a guideline. It's a seriously delicious combination though. This Smoky Grilled Pineapple Burger is always a crowd-pleaser at my house. Paleo Recipe - Slow Cooker Beef and Sweet Potato Stew

There is just nothing like a good hearty stew. Growing up it was a staple in our household during the fall and winter months. There was nothing better than coming in from a long day of sledding and frolicking in the snow to a hot bowl of stew. Since going paleo I've had to tweak my old standby recipes a bit, but it was well worth it.  Slow Cooker Beef and Sweet Potato Stew 2 lbs stew meat 1 1/2 cups lower sodium beef stock 1 large onion, chopped 3 cloves garlic, minced 3 carrots, sliced 3 stalks celery, chopped 2 large sweet potatoes, diced 1 teaspoon marjoram 2 tablespoons Worcestershire sauce (read labels, there's hfcs in many brands) 1 teaspoon sea salt 1 teaspoon black pepper 1 can diced tomatoes (don't drain) Add the stew meat, beef broth, onion, garlic, Worcestershire sauce, and seasonings to your slow cooker and cook on low for about 4 or 5 hours. Paleo Recipe - Italian Style Meatloaf

I love meatloaf. So does my husband. I think the kids mostly just tolerate it, but it winds up on the menu about every other week around here. Especially in the fall and winter.  I try to change my recipe up often so it doesn't get boring. This is my latest re-invention of the meatloaf. Italian-Style Meatloaf 2 pounds lean ground beef 1 - 6 oz can tomato paste 2 tablespoons extra virgin olive oil 1 medium onion chopped 4 cloves garlic minced 1 - 8 oz package mushrooms 1/2 bunch Italian parsley 2 eggs 1/2 cup almond meal 1 teaspoon sea salt  1 teaspoon black pepper 1 teaspoon basil Preheat oven to 350. Add 1 tablespoon olive oil to small skillet and heat to medium. Add onions and saute. When onions begin to become translucent add garlic. Saute a few minutes longer, until garlic is soft. Put mixture  into mixing bowl to cool. Add other tablespoon of olive oil to same skillet and cook mushrooms 7 to 9 minutes until soft (I usually break them up into smal

Paleo Recipe - Chicken Ratatouille

This recipe is one of hubby's all-time favorite things that I make. He says it ranks right behind my  paleo cake . Considering his, ahem, reformed sweet tooth I take that as quite the compliment! Chicken Ratatouille 2 lbs chicken breast 3 tablespoons extra virgin olive oil 1 eggplant, diced 2 zucchini, sliced 1 yellow squash, sliced 4 cloves garlic, minced 1 large yellow onion, chopped 1 teaspoon oregano 2 teaspoons basil 1 teaspoon sea salt 1 teaspoon black pepper 2 cans stewed tomatoes (read your labels!) Boil or bake chicken breast until done. I often do this ahead on Sunday to make this recipe a snap for weeknight dinners. Cut up. Heat skillet with olive oil and saute the onion and garlic.  Add eggplant, zucchini, and yellow squash along with the seasonings. Cook until soft. Add cooked chicken breast. Add stewed tomatoes at the very end and cook until just heated. (You can also add the stewed tomatoes with the squash, but I prefer them not cooked to mush

Paleo Recipe - Chicken Sausage & Kale Stew

Chicken Sausage and Kale Stew 2 packages chicken sausage - I've used all kinds for this recipe: breakfast sausage, Italian turkey sausage, and this time I used a spicy chicken sausage I found on sale. Whatever you prefer, as always read your labels. 1 tablespoon coconut oil 1 medium onion, chopped 4 cloves garlic, diced 2 stalks of celery, diced 1/2 red bell pepper diced 1 can stewed tomatoes 1/2 a bunch of kale, torn into small pieces (I usually remove the stems) 1 teaspoon oregano 1 teaspoon basil 4 cups low sodium chicken broth Add coconut oil to skillet heated over medium heat and cook chicken sausage until done.  Transfer to a stew pot and add chicken broth and all ingredients except the stewed tomatoes. Cook until kale etc is soft. I always want to make my own, but haven't had time.  Add the stewed tomatoes at the end and cook just until heated. Read your labels. A lot of stewed tomatoes have HFCS. This makes plenty for my family of 5 with left
