Paleo Smoky Grilled Pineapple Burgers

Since going Paleo my family has fallen even more in love with our grill. Paleo and grilling just work well together. The past couple of years I've even been stepping outside my grilling comfort zone more and more. Grilling things I'd never thought to have grilled before and trying new flavor combinations. I have to say I'm pretty thrilled with the results of most of my flavor experiments.  In the past I'd never have thought to grill fruit, but it's amazing. Grilling fruit and adding it to traditionally savory dishes? Brilliant. Oh yes, and? New rule: every burger recipe for the rest of forever must contain grilled pineapple. OK, maybe more of a guideline. It's a seriously delicious combination though. This Smoky Grilled Pineapple Burger is always a crowd-pleaser at my house. Talkin' Smack to Mr. Scale



I thought this morning that this would be my 100th post. Woot! But...Oh, the pressure. A 100th post should be something special, something worth reading...right? I thought and thought...and I decided my 100th post would be a letter. Inspired by http://tjstestkitchen.blogspot.com/2010/03/dear-scale.html and a few other posts I've read lately. I agonized and worked hard on the pics. Then I realized it is my 99th post. Oh well, enjoy!

Dear Mr. Scale:

I have noticed you knocking a few of my friends around lately. Taking some cheap shots at them. They are pouring their heart and soul into their weight loss/getting healthy efforts and you are sneering at them. Taunting them. Trying to knock them down. 

Well, I am here to tell you to back off! You are nothing, nobody, a silly little square in our bathrooms. Yes, we can use you to judge our weight loss. But, quite honestly, you do a piss poor job of THAT even.

I stepped on you this day and you read: 185 lbs. OK, good enough.

I stepped on you a MONTH later and you said: 184 lbs. There you go with your attempts at discouragement. One pound down in a month! Ugh. Then I looked at the pictures together, hrmm, definitely progress there.

Now, it has been almost two months since that weigh in and you have been seriously messing with me. You read: 179.5, 181, 178, and have been stuck on 178.5 for about two weeks. (Seriously, don't you get sick of repeating yourself?)

But I haven't let you get me down, haven't let you win. I have been plugging away. Counting my calories, getting my workouts in, drinking my water, and fighting like heck to stay positive in spite of YOU...and might I present...

What do you have to say for yourself Mr. Scale? If your job is to tell me how much progress I've made, it seems as if you aren't doing your job very well?!

The scale says I've lost 6.5 lbs since starting this blog. I feel I have made much more progress than that number could ever tell!


Now, I guess I'll go back to agonizing over my 100th post!

  2. Inches can for sure be an awesome measure for success. We all know that replacing fat with muscle won't change the scale much but we still let it get to us. Great work. Seriously!

  7. Wow! A picture is worth a thousand words, and a number is just a number, Mr. Scale! (personally I think of my scale as female, and she is one moody old cow!) You look awesome! What a difference even in just the first 2 pics.

  9. Yeah...I don't like my scale none. Only thing it's been good for lately is telling me I haven't gained! If it weren't for my clothes feeling different I'd be more upset!

  12. Wow, you can really see a difference throughout the progress pics! Pretty sure my scale cries a little every time I get out the tape for measurements... because as I see the inches coming off I can look at the scale say "take that." :)

  19. Serious progress! You look great! I started my measurements when I started and even tho the scale wasn't moving I was losing inches like crazy. I hate the scale!

30 Easy Prep and Pack Whole30 Lunch Recipes

The Whole30 Program is amazing. I highly recommend it. Every time I've done a Whole 30 I have felt AMAZING by the end. It's a very empowering experience. It is not however an easy one. Mostly because the food prep can take much more time if you're used to grab and go options. A little planning ahead and you can definitely make it through the 30 days. When it comes to Whole30 lunches, 3 things worked best for me: Quick and easy salads. Prepping food on Sunday. Cooking too much at dinner and eating leftovers for lunch the next day. I thought I'd share 30 of the awesome Whole30 lunch recipes I've found from my favorite bloggers (and a few from me!). I've included all three options I listed above. I'm always playing around with easy snack recipes for my paleo kiddos. This Paleo Energy Bar Recipe in many incarnations is our go-to! It takes no time at all to whip a batch up and the kids love them. They're not only paleo, but also vegan, gluten-free, grain-free, soy-free, and dairy-free. Plus, I mean... there's chocolate. ;) Just 4 ingredients! Paleo Energy Bars Ingredients 1 cup Whole Natural Almonds 12 to 14 Organic Medjool Dates , de-pitted 1/2 of a Alter Eco Chocolate Dark Blackout 85% 1/4 cup Raw Pumpkin Seeds Directions Pulse the almonds in food processor until you get small bits, but not paste. Empty into mixing bowl. Do the same with the dark chocolate. Process the dates in the food processor until smooth. They will tend to come together in a ball. Add to nut/chocolate mixture. KETO Cocktails: The Lemon Drop

I love a good glass of red wine now and then, I mean it's practically a health food, right? ;) But sometimes I just want a cocktail. I'm all for moderation and having a drink now and then, but I'm just not down with the calorie, carb, and sugar counts of some of my favorites. Seriously, have you ever looked them up? Eek. OK, I know I've been on quite the low carb pancake tangent lately, but THESE! Seriously, these are yummtastic. Yummazing? Ya, they're really good.
