Since going Paleo my family has fallen even more in love with our grill. Paleo and grilling just work well together. The past couple of years I've even been stepping outside my grilling comfort zone more and more. Grilling things I'd never thought to have grilled before and trying new flavor combinations. I have to say I'm pretty thrilled with the results of most of my flavor experiments. In the past I'd never have thought to grill fruit, but it's amazing. Grilling fruit and adding it to traditionally savory dishes? Brilliant. Oh yes, and? New rule: every burger recipe for the rest of forever must contain grilled pineapple. I used to be so excited when the sugar-free peppermint mocha coffee creamers showed up at the grocery store every year during the holidays. Then, I went and ruined everything by reading the stupid label! Le sigh... oh the chemical-crap-ingredients! Despair.

Dairy-Free KETO Peppermint Mocha Coffee Creamer Recipe
Ingredients:
2 Cans Organic Simple Coconut Milk
1/2 Cup Organic Cocoa Powder
1 teaspoon Organic Peppermint Flavor
1/4 teaspoon Xanthum Gum
Monk Fruit Drops to Taste (try the vanilla)
Instructions:
Add all ingredients to your blender and blend well, stopping to scrape down the sides once. Add to a 32 oz container and store in your refrigerator for up to a week.
Notes:
I prefer to add the sweetener as I make each cup of coffee instead of to the entire recipe (usually 10-20 drops per cup). It's easier to get the sweetness right, especially if more than one person is using the creamer.
When you add the creamer to your coffee you can just stir it in or use a coffee frother, but I prefer to make a delicious frothy treat each morning by adding it to my blender. So good.
