OK, I know I've been on quite the low carb pancake tangent lately, but THESE! Seriously, these are yummtastic. Yummazing? Ya, they're really good. They just might be my favorite recipe I've ever done. Ever. OK, that might be my paleo apple crisp recipe, but that's not low, I wonder if I could tweak that low carb...

That would be brilliant!

You know, bloggers area always talking seo this and seo that (seo stands for search engine optimization if you're not a blogger) and I'm just over here yammering. I'm pretty sure when google's spider crawlers (anyone shiver at that word picture? eesh) get to FitViews they just think, "Yeesh, move along. Nothing to see here." Ha ha ha!

Anyway, pancakes. KETO Hot Cocoa Low Carb Pancakes no less. So good. 

Hot Cocoa Pancakes

As I've mentioned before I'm back to low carb (keto actually) and developing new recipes to make it easier to stick with. I find I just plain feel great when I eat ketogenic, and I definitely have better progress with weight loss when I eat this way. I admit it can be a challenge to stick with, but with these pancakes? Who can feel deprived? Not me. YUM.

Whether you're seriously bored with your egg fast or just a low carb, LCHF, or keto diet eater these Hot Cocoa Low Carb Pancakes are for you! With only 6 grams of carbs for the ENTIRE RECIPE (4 grams net carbs) they'll fit nicely in your plan. They're a quick and super easy breakfast option. Plus, yes, they're delicious! They really do taste like hot cocoa. I could really eat them every. single. day. Plus, they're oh so appropriate for this time of year. OK, who am I kidding, I will eat them year-round.

And? If eating these for lunch is wrong, I don't want to be right.

This recipe makes 3 or 4 decent sized pancakes and comes in at 360 calories according to my tracking in My Fitness Pal. I generally eat the whole thing and double the batch if hubby wants some too. It easily doubles or triples or feed however many you'd like. I love to make a giant batch on Sunday and have them ready for the week. Just reheat in the microwave and go (or I don't mind them cold even!).

Hot Cocoa Low Carb Pancakes


For this recipe you'll need:

A mixing bowl (I like to use a large glass measuring cup to easily pour the batter in the skillet), a hand mixer, measuring spoons, a small non-stick skillet (I love my Non-Stick Ceramic Skillet), and a spatula that won't scratchyour skillet.


2 Eggs
2 oz Cream cheese softened
1/2 tsp Vanilla
2 Packets stevia or other low carb sweetener (read your labels, there can be sneaky carbs here)
1 Tablespoon Cocoa Powder
Gheefor the skillet


Add all of the ingredients to your mixing bowl and blend well with your hand mixer on medium. The batter should be smooth with no bits of cream cheese visible (though I've been impatient and made them this way and it was fine, just with bits of cream cheese in the finished pancakes obviously). Preheat your small non-stick skillet to medium-low (3 on my stove top) and add a little ghee. Pour just enough batter into your skillet to cover the bottom. Wait until bubbles appear and pancake appears set. Flip. Cook until done, about 30-60 seconds on the second side.

Hot Chocolate Pancakes


The cream cheese will blend better if it is softened. You can either just let it sit on the counter for a bit or soften it in the microwave for 30ish seconds. Also, this batter will be very runny. The pancakes will be crepe-like and thing. Be sure the pancake is set well enough before you flip, and don't cook on too high heat.

Low Carb Hot Cocoa Pancakes

For a special keto treat serve them with a little heavy whipping cream.

These Hot Cocoa Low Carb Pancakes are seriously delicious, and an amazing option if you're tired of traditional low carb ways to have eggs. In describing them I'd say maybe a tad bit crepe-like in consistency. Definitely not the consistency of a traditional wheat flour pancake, but an amazing treat when you're egg-fasting, low carb, or keto!
