Since going Paleo my family has fallen even more in love with our grill. Paleo and grilling just work well together. The past couple of years I've even been stepping outside my grilling comfort zone more and more. Grilling things I'd never thought to have grilled before and trying new flavor combinations. I have to say I'm pretty thrilled with the results of most of my flavor experiments. In the past I'd never have thought to grill fruit, but it's amazing. Grilling fruit and adding it to traditionally savory dishes? Brilliant. Oh yes, and? New rule: every burger recipe for the rest of forever must contain grilled pineapple. Keto Chocolate Peppermint Mug Cake with Peppermint Cream Cheese Frosting
Ingredients:
1 Egg Beaten
1/4 Cup Almond Flour
1 Tablespoon Organic Cocoa Powder
1/4 teaspoon Aluminum Free Baking Powder
1 Tablespoon gently melted Coconut Oil
1 Tablespoon Warm Water
1/4 teaspoon Organic Peppermint Flavor
20 Drops Monk Fruit (to taste)
Instructions:
Mix all ingredients well and microwave for 90 seconds. Set to cool and start the frosting...
Keto Peppermint Cream Cheese Frosting
Ingredients:
1 Ounce Cream Cheese
2-3 drops Organic Peppermint Flavor
10 Drops Monk Fruit (to taste)
Instructions:
Put Cream Cheese in microwave for 20-30 seconds to soften. Add the peppermint and monk fruit, stir well, and frost your mug cake.
