Since going Paleo my family has fallen even more in love with our grill. Paleo and grilling just work well together. The past couple of years I've even been stepping outside my grilling comfort zone more and more. Grilling things I'd never thought to have grilled before and trying new flavor combinations. I have to say I'm pretty thrilled with the results of most of my flavor experiments. In the past I'd never have thought to grill fruit, but it's amazing. Grilling fruit and adding it to traditionally savory dishes? Brilliant. Oh yes, and? New rule: every burger recipe for the rest of forever must contain grilled pineapple. I'm pretty fond of mini muffins; especially since going Paleo. They're just the perfect portion control for Paleo 'treats'. These are some I came up with over the weekend. Even my kids love them!
Banana Bread Mini Muffins
1/2 Coconut Flour
1 tsp Baking Soda
1/2 tsp Sea Salt
1 tsp Cinnamon
1 tsp Vanilla
2 Very Ripe/Mashed Bananas
4 Eggs
4 Tblsp Grass Fed Butter-Melted (you could substitute coconut oil)
2 Tblsp Honey (optional)
Sift the dry ingredients together. In a separate bowl beat the eggs and then mix all wet ingredients well. Mix the two together until smooth.
Grease 2 mini muffin tins or line with baking cups. Spoon mixture into the tins.
Bake at 375 for 12 to 14 minutes.
Makes 21-24 muffins.
They're especially yummy when paired with a good cup of coffee. Enjoy!
