I'm pretty fond of mini muffins; especially since going Paleo. They're just the perfect portion control for Paleo 'treats'. These are some I came up with over the weekend. Even my kids love them!
Banana Bread Mini Muffins
1/2 Coconut Flour
1 tsp Baking Soda
1/2 tsp Sea Salt
1 tsp Cinnamon
1 tsp Vanilla
2 Very Ripe/Mashed Bananas
4 Eggs
4 Tblsp Grass Fed Butter-Melted (you could substitute coconut oil)
2 Tblsp Honey (optional)
Sift the dry ingredients together. In a separate bowl beat the eggs and then mix all wet ingredients well. Mix the two together until smooth.
Grease 2 mini muffin tins or line with baking cups. Spoon mixture into the tins.
Bake at 375 for 12 to 14 minutes.
Makes 21-24 muffins.
They're especially yummy when paired with a good cup of coffee. Enjoy!
