Since going Paleo my family has fallen even more in love with our grill. Paleo and grilling just work well together. The past couple of years I've even been stepping outside my grilling comfort zone more and more. Grilling things I'd never thought to have grilled before and trying new flavor combinations. I have to say I'm pretty thrilled with the results of most of my flavor experiments. In the past I'd never have thought to grill fruit, but it's amazing. Grilling fruit and adding it to traditionally savory dishes? Brilliant. Oh yes, and? New rule: every burger recipe for the rest of forever must contain grilled pineapple. The love of my life turned 41 today. I was going to make hubby some paleo walnut meal brownies, but instead I decided to go all out and take a stab at a paleo-friendly chocolate cake. It turned out pretty good!
Paleo Chocolate Birthday Cake Recipe
7 eggs
1 cup canned coconut milk
1/2 cup raw local honey
1/3 cup organic virgin coconut oil gently melted
1 tsp organic vanilla
3/4 cup organic cocoa powder
1/2 cup organic coconut flour
1 tsp baking powder
1 tsp baking soda
1 cup organic heavy whipping cream for 'frosting' (optional)
Beat eggs with an electric mixer until frothy. Add in coconut milk, honey, coconut oil, and vanilla. Mix well. Add in remaining dry ingredients until combined. Grease a cake pan (I used an oblong which makes the cake a bit thin, if you use a smaller round or square you may need to adjust baking time) with coconut oil and pour in batter. Bake at 350 degrees 25-27 minutes or until toothpick comes out clean.
We do the occasional dairy, so I frosted hubby's cake with plain heavy whipping cream beaten into whipped cream. You could sweeten this if you wish. We're so used to not eating sweets that we prefer it plain now.
I can't even imagine the calorie count in this...it's obviously a paleo birthday treat! Hubby loved it though.
