Since going Paleo my family has fallen even more in love with our grill. Paleo and grilling just work well together. The past couple of years I've even been stepping outside my grilling comfort zone more and more. Grilling things I'd never thought to have grilled before and trying new flavor combinations. I have to say I'm pretty thrilled with the results of most of my flavor experiments. In the past I'd never have thought to grill fruit, but it's amazing. Grilling fruit and adding it to traditionally savory dishes? Brilliant. Oh yes, and? New rule: every burger recipe for the rest of forever must contain grilled pineapple. Around here we have mad love for the Hasta La Vista Pasta Lasagna recipe from the Everyday Paleo cookbook. It's a family favorite. Every once in a while however it's nice to have something a little more pasta-ish. Especially if we're having guests over or taking a dish somewhere.

Easy Gluten Free and Grain Free Lasagna Recipe
2 tablespoons extra virgin olive oil
1 medium yellow onion chopped
3 cloves garlic minced
2 pounds lean ground beef
1/2 teaspoon sea salt
1/2 teaspoon black pepper
1 package Cappello's Lasagna Sheets
1 jar chunky spaghetti sauce (read your labels!)
2 cups shredded mozarella
Preheat oven to 350.
Saute onions and garlic in EVOO. Add ground beef and brown. Add salt and pepper.
In a 9 x 13 cake pan layer lasagna sheets (cutting to size as needed), half the ground beef and spaghetti sauce and 1/3 of the cheese. Repeat. Top with the remaining 1/3 of the cheese.
Bake about 35 minutes.
