Since going Paleo my family has fallen even more in love with our grill. Paleo and grilling just work well together. The past couple of years I've even been stepping outside my grilling comfort zone more and more. Grilling things I'd never thought to have grilled before and trying new flavor combinations. I have to say I'm pretty thrilled with the results of most of my flavor experiments. In the past I'd never have thought to grill fruit, but it's amazing. Grilling fruit and adding it to traditionally savory dishes? Brilliant. Oh yes, and? New rule: every burger recipe for the rest of forever must contain grilled pineapple. One of the most frequent requests I get is for EASY Paleo recipes and meals. Things that don't take hours of cooking and prep work. Meals that can be made quickly or ahead of time.
I'll be posting several recipes in the upcoming weeks and months in response to this request. First, my new go-to easy Paleo lunch recipe (and Whole30 friendly too!).
Easy Paleo Tuna Salad
1 can Wild Planet Skipjack Light Tuna
3 Tbsp Paleo Mayo (to taste, sometimes I only use 2)
1 Tbsp minced white onion (again, more or less to taste)
1 dill pickle diced (read your labels!)
Mix all ingredients well with a fork.
Serve it in lettuce cups, cucumber cups, lettuce wraps, or on apple slices. I LOVE this with baby spinach and pink lady apples:
