Since going Paleo my family has fallen even more in love with our grill. Paleo and grilling just work well together. The past couple of years I've even been stepping outside my grilling comfort zone more and more. Grilling things I'd never thought to have grilled before and trying new flavor combinations. I have to say I'm pretty thrilled with the results of most of my flavor experiments. In the past I'd never have thought to grill fruit, but it's amazing. Grilling fruit and adding it to traditionally savory dishes? Brilliant. Oh yes, and? New rule: every burger recipe for the rest of forever must contain grilled pineapple. I was thinking about spice cake the other day. As one does. I was remembering the spice cake my mom used to make. Which of course lead me to wondering if I could make a keto mug cake version that would be close.

Keto Spice Cake Mug Cake Recipe
In an 11+ ounce microwave-safe mug add:
Ingredients:
1 beaten Egg
1/4 Cup Almond Flour
1 teaspoon low carb Brown Sugar Substitute
1/4 teaspoon Aluminum Free Baking Powder
1 teaspoon Brown Sugar Style Low Carb Sweetener
1/2 teaspoon Organic Saigon Cinnamon
pinch of salt
pinch of Organic Nutmeg
pinch of Organic Cloves
pinch of Organic Ginger
1 Tablespoon gently melted Coconut Oil1 Tablespoon Warm Water
Instructions:
Combine ingredients well and microwave for 2 minutes.
Keto Brown Sugar Cream Cheese Frosting - Single Serve Recipe for Mug Cakes
Ingredients:
2 Tablespoons Cream Cheese
1/2 teaspoon Brown Sugar Style Low Carb Sweetener
1/2 teaspoon Heavy Cream
Instructions:
Mix well and frost your cooled mug cake!
