Since going Paleo my family has fallen even more in love with our grill. Paleo and grilling just work well together. The past couple of years I've even been stepping outside my grilling comfort zone more and more. Grilling things I'd never thought to have grilled before and trying new flavor combinations. I have to say I'm pretty thrilled with the results of most of my flavor experiments. In the past I'd never have thought to grill fruit, but it's amazing. Grilling fruit and adding it to traditionally savory dishes? Brilliant. Oh yes, and? New rule: every burger recipe for the rest of forever must contain grilled pineapple. Hoping for a solution I picked up some ready made sugar-free peppermint mocha creamer at the grocery store, shuddered at the ingredient list, and promptly put it back down. Yuck. So I decided I wanted to tackle the peppermint mocha and come up with a dairy-free, sugar-free, Keto friendly version. It took some trial and error, but I think I've got it! Now I can have a keto peppermint mocha anytime.
Not only is this recipe Keto, but it's also paleo, vegan, gluten-free, dairy-free, soy-free, and sugar-free.

Keto Peppermint Mocha Coffee Creamer

Look at the ingredients of most store-bought peppermint mocha creamers and just don't do it! Back away. Back. Away. This Keto Peppermint Mocha coffee creamer recipe is delicious and devoid of all that junk. Plus, it's dairy-free, gluten-free, soy-free, and sugar-free. Now you can happily have keto peppermint mochas all season long.
ingredients:
- 1 (13.66 ounce) can coconut cream (unsweetened)
- 1/3 cup organic raw cocoa powder
- 8 to 10 packets Truvia OR 15 to 20 drops liquid monk fruit (depending how sweet you like your coffee)
- 1/2 to 1 teaspoon organic peppermint (to taste)
- 1 teaspoon organic vanilla extract
instructions:
- Add all ingredients to your blender and blend well, about 45 seconds, stopping once to scrape down the sides (the cocoa powder tends to stick to the sides).
- Use to taste in your favorite coffee or espresso.

Options:
- If you prefer diary, you can swap the coconut cream for 2 cups heavy whipping cream (just mix well and don't use a blender or you'll whip it).
- OR, to up the MCTs try adding a scoop of mct powder to each cup as you prepare it, YUM.
There are approximately 2 total carbs (if you use monk fruit sweetener) per 2 Tablespoon serving of the prepared creamer.
Use to taste in your favorite coffee or espresso (generally 2 to 4 tablespoons per drink). If you have a frother, give it a whirl.
Stores well in a pint jar in the refrigerator for about a week.
For a special holiday treat top it with whipped coconut cream (or real whipped cream if you do dairy) sweetened with Truvia or monk fruit and a sprinkle of cocoa powder. YUM!
