Paleo Smoky Grilled Pineapple Burgers

Since going Paleo my family has fallen even more in love with our grill. Paleo and grilling just work well together. The past couple of years I've even been stepping outside my grilling comfort zone more and more. Grilling things I'd never thought to have grilled before and trying new flavor combinations. I have to say I'm pretty thrilled with the results of most of my flavor experiments.  In the past I'd never have thought to grill fruit, but it's amazing. Grilling fruit and adding it to traditionally savory dishes? Brilliant. Oh yes, and? New rule: every burger recipe for the rest of forever must contain grilled pineapple. OK, maybe more of a guideline. It's a seriously delicious combination though. This Smoky Grilled Pineapple Burger is always a crowd-pleaser at my house. With her latest offering in the fitness DVD realm-  Jillian Michaels: Killer Buns and Thighs - Jillian Michaels delivers again in typical Jillian style . To some, that will be the problem.  I hear this less since she left the Biggest Loser, but I still hear it.   It seems most people either love her attitude or can't stand it, with few in between.  But if you are a Jillian fan like me (or a can tolerate Jillian for a great workout type) this is an intense sweat-fest of a DVD that I highly recommend.  From the packaging: Do the saddlebags on your legs make you insane? Wednesday Weigh in 11/16

I didn't want to weigh this morning, then after I weighed I didn't want to post. I'm still in this 175 Plateau. Circling around back and forth. Up half a pound, down half a pound. Up a pound, down a pound. I've been feeling beyond frustrated with it.  But then, I made a choice. I decided I am going to focus on the positive. Success is not in that scale. Success is in the choices I make day in, day out, every day.   This last week I stuck with my #30days2ahabit and rocked my workouts. The only day I missed was Sunday. I thought about re-starting the 30 days, but decided not to unless I miss another day. I did level 3 of Jillian's new Killer Buns & Thigh DVD. Oh. My. It is killer. I did every move and even the advanced versions of most. I'm crazy sore, but I'm crazy proud. I'm not sure if I've ever done a Jillian level 3 before. My eating was just kind of meh. I didn't make bad food choices, but overall ate more than I needed to. S

Wednesday Weigh in 11/9

Ok, let's be real here. This last week was not a great week for me. I felt like a bottomless pit. Hungry. Hungry. Hungry. Not only that but I fell into some old patterns with emotional eating too. And the scale, well, the scale is up half a pound again. I actually expected more. It's taken me about six years to lose the weight I have. But the frustrating part is for the last year and a half of that I have gone up and down, back and forth with my weight loss. I got down to 172 and then went back up into the 180's. Since then it's been up and down, up and down.  At this point I want progress so badly. This back and forth, hovering right around 175 is beyond frustrating. It's been over a year of this, I want to move forward and stop messing around.  Successful weight loss needs to be a lifestyle change. We have to be in it for the long haul. We have to make changes to last a lifetime. It's not a crash diet and then back to business as usual. It's fore

Paleo Recipe: Banana Bread Mini Muffins

I'm pretty fond of mini muffins; especially since going Paleo. They're just the perfect portion control for Paleo 'treats'. These are some I came up with over the weekend. Even my kids love them! Banana Bread Mini Muffins 1/2 Coconut Flour 1 tsp Baking Soda 1/2 tsp Sea Salt 1 tsp Cinnamon 1 tsp Vanilla 2 Very Ripe/Mashed Bananas 4 Eggs 4 Tblsp Grass Fed Butter-Melted (you could substitute coconut oil) 2 Tblsp Honey (optional) Sift the dry ingredients together. In a separate bowl beat the eggs and then mix all wet ingredients well. Mix the two together until smooth. Grease 2 mini muffin tins or line with baking cups. Spoon mixture into the tins. Bake at 375 for 12 to 14 minutes. Makes 21-24 muffins. They're especially yummy when paired with a good cup of coffee. Enjoy!

This is NOT me today! ;) Source I woke up this morning feeling fantastic. It's November 1st and I feel AMAZING!
