With her latest offering in the fitness DVD realm, Jillian Michaels: Killer Buns and Thighs, Jillian Michaels delivers again in typical Jillian style. To some, that will be the problem. I hear this less since she left the Biggest Loser, but I still hear it.It seems most people either love her attitude or can't stand it, with few in between. But if you are a Jillian fan like me this is an intense sweat-fest of a DVD that I highly recommend.

Wednesday Weigh in 11/16

I didn't want to weigh this morning, then after I weighed I didn't want to post.


I'm still in this 175 Plateau. Circling around back and forth. Up half a pound, down half a pound. Up a pound, down a pound. I've been feeling beyond frustrated with it. 


But then, I made a choice. I decided I am going to focus on the positive. Success is not in that scale. Success is in the choices I make day in, day out, every day.


This last week I stuck with my #30days2ahabit and rocked my workouts. The only day I missed was Sunday. I thought about re-starting the 30 days, but decided not to unless I miss another day. I did level 3 of Jillian's new Killer Buns & Thigh DVD. Oh. My. It is killer. I did every move and even the advanced versions of most. I'm crazy sore, but I'm crazy proud. I'm not sure if I've ever done a Jillian level 3 before.

Wednesday Weigh in 11/9

Ok, let's be real here. This last week was not a great week for me. I felt like a bottomless pit. Hungry. Hungry. Hungry. Not only that but I fell into some old patterns with emotional eating too. And the scale, well, the scale is up half a pound again. I actually expected more.



It's taken me about six years to lose the weight I have. But the frustrating part is for the last year and a half of that I have gone up and down, back and forth with my weight loss. I got down to 172 and then went back up into the 180's. Since then it's been up and down, up and down. 


At this point I want progress so badly. This back and forth, hovering right around 175 is beyond frustrating. It's been over a year of this, I want to move forward and stop messing around. 


Successful weight loss needs to be a lifestyle change. We have to be in it for the long haul. We have to make changes to last a lifetime. It's not a crash diet and then back to business as usual. It's forever. I'v…

Paleo Recipe: Banana Bread Mini Muffins

I'm pretty fond of mini muffins; especially since going Paleo. They're just the perfect portion control for Paleo 'treats'. These are some I came up with over the weekend. Even my kids love them!


Banana Bread Mini Muffins
1/2 Coconut Flour
1 tsp Baking Soda
1/2 tsp Sea Salt
1 tsp Cinnamon


1 tsp Vanilla
2 Very Ripe/Mashed Bananas
4 Eggs
4 Tblsp Grass Fed Butter-Melted (you could substitute coconut oil)
2 Tblsp Honey (optional)


Sift the dry ingredients together. In a separate bowl beat the eggs and then mix all wet ingredients well. Mix the two together until smooth.
Grease 2 mini muffin tins or line with baking cups. Spoon mixture into the tins.
Bake at 375 for 12 to 14 minutes.
Makes 21-24 muffins.


They're especially yummy when paired with a good cup of coffee. Enjoy!

The Day After

I woke up this morning feeling fantastic. It's November 1st and I feel AMAZING! Now, this may not seem like a stop-the-presses-hold-the-phone-mark-the-calendar event, but it is. You see, normally November 1 is the day after. The day after Halloween (obviously). The day after I stuffed so much candy in my face I should have gone into a sugar coma. The day after funk.

KETO Cocktails: The Lemon Drop

I love a good glass of red wine now and then, I mean it's practically a health food, right? ;) But sometimes I just want a cocktail. I'm all for moderation and having a drink now and then, but I'm just not down with the calorie, carb, and sugar counts of some of my favorites. Seriously, have you ever looked them up? Eek. So, I've set to work at converting my favorite cocktail recipes to be more keto diet friendly!

The first cocktail recipe I'm tackling is the keto lemon drop. I used to love these, but haven't had one in years because of the sugar in them. In my early twenties I had a friend who used to make them for me all the time. We would have a shaker full of these, a good dinner, and a chick flick on a weeknight, it was kind of bliss. Her recipe called for so. much. SUGAR though! Looking back I think she may have used a wee bit more sugar than most, but they were really good.

Paleo Smoky Grilled Pineapple Burgers

Since going Paleo my family has fallen even more in love with our grill. Paleo and grilling just work well together. The past couple of years I've even been stepping outside my grilling comfort zone more and more. Grilling things I'd never thought to have grilled before and trying new flavor combinations. I have to say I'm pretty thrilled with the results of most of my flavor experiments. 

In the past I'd never have thought to grill fruit, but it's amazing. Grilling fruit and adding it to traditionally savory dishes? Brilliant.

Oh yes, and? New rule: every burger recipe for the rest of forever must contain grilled pineapple. OK, maybe more of a guideline. It's a seriously delicious combination though.

KETO Hot Cocoa Pancakes

OK, I know I've been on quite the low carb pancake tangent lately, but THESE! Seriously, these are yummtastic. Yummazing? Ya, they're really good. They just might be my favorite recipe I've ever done. Ever. OK, that might be my paleo apple crisp recipe, but that's not low carb...ooo, I wonder if I could tweak that low carb...

Keto Coffee Cake Mug Cake

Dairy-free keto has been pretty seamless for me. Well... almost. I miss my keto pancake recipes. Which ALL contain cream cheese. So bummer. I mean, one can only have omelets for breakfast so many times.
In looking for something delicious to replace these with I've started playing around with keto mug cake recipes. Yes, you can look forward to a deluge of about 5 million and 3 of those variations in the near future. ;)
This recipe was an accident. I've been working on chocolate variations the most. For obvious reasons. So much so that I ran out of cocoa powder. I started making a chocolate mug cake the other day and when I reached for the cocoa powder there was none. Oops. 
So, after some digging I found cinnamon and thought, hmm why not?
Why not indeed! This Keto Coffee Cake Mug Cake is my new favorite keto breakfast. It's quick, easy, and completely delicious. With only 7 grams total carbs and 320 calories, I confess I have one most days for brekkie.

Easy KETO Mocha Recipe

Keto coffees are a staple in my daily ketogenic diet lifestyle. I have an average of 4 a day and mix it up quite a bit. You know me and my coffee; you should see my counter top full of keto products and concoctions I've built up. I just love trying and combining them for new coffee recipes. All super easy and delicious.

I have gone back and forth with low carb since I was 24. I feel better when eating keto and I definitely have good progress with weight loss when I eat that way, but it can be a challenge to stick with. As I get older I find that the feeling better part of being low carb has become my driving motivation for sticking to it. Easy Paleo Mashed Sweet Potatoes

Growing up the only encounter I had with sweet potatoes was at Thanksgiving dinner. I hesitate to even call them sweet potatoes though. They were more like sugar coated sugar, with a side of sugar. Seriously!
The recipe was to coat a baking dish in margarine, add diced sweet potatoes, top with more margarine and a healthy heaping of brown sugar. Bake. And then? At the end you top the whole thing with a bag of marshmallows and bake again.
Blech! Needless to say I was never fond of sweet potatoes.
