Paleo Smoky Grilled Pineapple Burgers

Since going Paleo my family has fallen even more in love with our grill. Paleo and grilling just work well together. The past couple of years I've even been stepping outside my grilling comfort zone more and more. Grilling things I'd never thought to have grilled before and trying new flavor combinations. I have to say I'm pretty thrilled with the results of most of my flavor experiments.  In the past I'd never have thought to grill fruit, but it's amazing. Grilling fruit and adding it to traditionally savory dishes? Brilliant. Oh yes, and? New rule: every burger recipe for the rest of forever must contain grilled pineapple. OK, maybe more of a guideline. It's a seriously delicious combination though. This Smoky Grilled Pineapple Burger is always a crowd-pleaser at my house. Easy Paleo Recipe - Roasted Chicken and Root Vegetables

I'm just going to say it: this recipe is the BOMB. The pics don't do it justice. I've GOT to get a better camera! We love, love, love this. My little boys even love it. Hubby requested that I make it every day. I suggested at least backing that off to every other. Roasted Chicken and Root Vegetables 3 to 4 lb whole chicken 1 large yellow onion 1 large sweet potato 2 parsnips 1 rutabaga poultry seasoning sea salt black pepper 3 to 4 tablespoons olive oil Preheat oven to 375. Remove giblets from thawed chicken. Rinse entire chicken inside and out.  Use a cake pan or roasting pan. Chop onion and place half of it under the chicken, place chicken in pan, then put the rest of the onion around it.  Chop root vegetables and place around the chicken in the pan. Drizzle the chicken and the vegetables with olive oil. Season with sea salt and pepper. Season the chicken only with the poultry seasoning blend. Paleo Recipe - Slow Cooker Beef With Broccoli

Since today is our first day back to homeschool I thought it appropriate to share a slow cooker recipe! When our homeschool year starts up my slow cooker becomes my best friend. Things get busy busy around here and dinner being done and ready at dinner time is an amazing thing.  I try not to do the same recipes over and over. Boredom is definitely the enemy of eating healthy.  This is a recipe that I came up with recently that is definitely a new favorite. Slow Cooker Beef With Broccoli 2 lbs stew meat 4 cloves garlic, minced 2 tablespoons fresh ginger, minced 1 large yellow onion, chopped 1/3 cup coconut aminos 1 cup less sodium beef stock 2 heads fresh broccoli 1 teaspoon sea salt 1 teaspoon black pepper Add all ingredients except the broccoli to your slow cooker and cook on low for about 6 hours. Slow cookers can vary greatly, so you may have to play with times and liquid amounts. Break the broccoli into florets and add on top. Cook an addition 1 to 2 hours on l

30 Days to a Faster 5k

One of my life goals is to always be in the shape to run a 5k. I want to always be able to just jump into a race, or at least run the distance, at any time. You know, until I get old...like 100. One of my 2012 goals was to run a sub 30 minute 5k. While I'd like to say I've been working hard towards that, the fact is I haven't. In fact, I haven't focused much on my running at all. Time to change that. While I may not be able to get that sub 30 this year, I can still improve. My fastest ever 5k was in 2010 at  32:50. The last 5k I ran was last fall at  38:24. Yikes! I'm running a 5k September 15th. I want to KILL it. My goal is to obliterate last year's time for the same 5k which was the 38:24. I'd like to come as close to my fastest time as possible. I'm always playing around with easy snack recipes for my paleo kiddos. This Paleo Energy Bar Recipe in many incarnations is our go-to! It takes no time at all to whip a batch up and the kids love them. They're not only paleo, but also vegan, gluten-free, grain-free, soy-free, and dairy-free. Plus, I mean... there's chocolate. ;) Just 4 ingredients! Paleo Energy Bars Ingredients 1 cup Whole Natural Almonds 12 to 14 Organic Medjool Dates , de-pitted 1/2 of a Alter Eco Chocolate Dark Blackout 85% 1/4 cup Raw Pumpkin Seeds Directions Pulse the almonds in food processor until you get small bits, but not paste. Empty into mixing bowl. Do the same with the dark chocolate. Process the dates in the food processor until smooth. They will tend to come together in a ball. Add to nut/chocolate mixture. I need a re-set. The last month and a half more and more non-paleo things have been sneaking into my face. A little more whey protein than usual. A little fake sugar here and there. Some raw cheese. More Starbucks indulgences than usual. Oh yes, and there was ice cream. Funny how that happens when we're not paying attention.  

Easy Gluten Free, Grain Free Lasagna Recipe

Around here we have mad love for the Hasta La Vista Pasta Lasagna recipe from the Everyday Paleo cookbook. It's a family favorite. Every once in a while however it's nice to have something a little more pasta-ish. Especially if we're having guests over or taking a dish somewhere.  I was delighted to find Cappello's!
