Paleo Smoky Grilled Pineapple Burgers

Since going Paleo my family has fallen even more in love with our grill. Paleo and grilling just work well together. The past couple of years I've even been stepping outside my grilling comfort zone more and more. Grilling things I'd never thought to have grilled before and trying new flavor combinations. I have to say I'm pretty thrilled with the results of most of my flavor experiments.  In the past I'd never have thought to grill fruit, but it's amazing. Grilling fruit and adding it to traditionally savory dishes? Brilliant. Oh yes, and? New rule: every burger recipe for the rest of forever must contain grilled pineapple. OK, maybe more of a guideline. It's a seriously delicious combination though. This Smoky Grilled Pineapple Burger is always a crowd-pleaser at my house. I suppose it's that time of year again. The time of year we welcome in the shiny New Year filled with hopes and dreams for a fresh start. We sit down and make lists. Resolutions. Things we're going to do different in the coming year.  We make our New Year's Resolutions. Unfortunately, let's be real friends, we don't tend to follow through with these New Years Resolutions. I'm all for goals, but we all know that the majority of people promptly break their New Year resolutions within 2 weeks or so.  But not us dear reader friends. Not this year!  No, we'll go ahead and make a goals list. I think those are fabulous for focus. For direction. For setting our intentions. I make them all year round. But then, we won't stop there. Let's choose not to be in that percentage that gives up. Let's take those goals and turn them into actions . Actions repeated. Then repeated again. On and on and on. For 66 days. Let's try a STREAK!

The end of 2016 has been a crazy blur for me. It's been work, work, freak out a little, work harder, repeat. I thought I'd just take a moment to grab a cup of coffee and chat. I always see bloggers do coffee date posts and think, "What a fun idea! I should do that." Then never do. So, if we were having coffee together... I love the one word concept. Boiling all of our goals, our intentions, our hopes, our visions for the next year down to one single word. A mantra condensed. Concentrated. Focused. Until we arrive at one word . As 2016 comes to a close, I've been looking back over the year. Looking at what worked and what didn't. Looking at successes and failures. Looking at the lessons learned. I've also been looking forward to 2017. Pondering goals. Considering options. Setting intentions. If we're Facebook friends you heard the news that my husband lost his job recently. This changes the landscape of our lives quite a bit. It shifts my part-time blogging back to more of a full-time endeavor again. It focuses me on my fiction writing more. It brings with it endless options and opportunities.
