Since going Paleo my family has fallen even more in love with our grill. Paleo and grilling just work well together. The past couple of years I've even been stepping outside my grilling comfort zone more and more. Grilling things I'd never thought to have grilled before and trying new flavor combinations. I have to say I'm pretty thrilled with the results of most of my flavor experiments. In the past I'd never have thought to grill fruit, but it's amazing. Grilling fruit and adding it to traditionally savory dishes? Brilliant. Oh yes, and? New rule: every burger recipe for the rest of forever must contain grilled pineapple. OK, maybe more of a guideline. It's a seriously delicious combination though. This Smoky Grilled Pineapple Burger is always a crowd-pleaser at my house. I've been playing around with my protein pancake recipe again lately. I'm ever on the quest for the perfect grain-free protein pancake. These two recipes are my reigning favorites right now:
1 scoop vanilla protein powder
1/4 cup canned coconut milk You can use coconut milk from a carton, but the recipe will be drier.
1/2 tsp baking powder
1/4 cup blueberries I prefer fresh blueberries, but since my kids and I generally devour those in 2 days I often use frozen. (I'd like to say they always get thawed first, but they often get tossed in frozen).
1 scoop any flavor protein powder
3 Tblsp Unsweetened Vanilla Almond Breeze
1/2 tsp baking powder
1 tsp walnut oil
1/4 cup blueberries (depending what flavor protein powder you can sub sliced bananas, a sprinkle of mini chocolate chips, or pretty much anything you like inyour pancakes here)
Two things about these recipes: you have to like the taste of your protein powder and you may need to adjust the liquids depending on your brand of protein powder.

Mix all ingredients well. Heat a skillet to medium heat and spray with cooking spray.
When it looks well set, flip. I've flipped prematurely and made a big mess. It still tasted good though!
Then, of course, if you're a blogger you then plate them on a white plate and take a pic. ;) Makes two good sized pancakes.
