Paleo Smoky Grilled Pineapple Burgers

Since going Paleo my family has fallen even more in love with our grill. Paleo and grilling just work well together. The past couple of years I've even been stepping outside my grilling comfort zone more and more. Grilling things I'd never thought to have grilled before and trying new flavor combinations. I have to say I'm pretty thrilled with the results of most of my flavor experiments.  In the past I'd never have thought to grill fruit, but it's amazing. Grilling fruit and adding it to traditionally savory dishes? Brilliant. Oh yes, and? New rule: every burger recipe for the rest of forever must contain grilled pineapple. OK, maybe more of a guideline. It's a seriously delicious combination though. This Smoky Grilled Pineapple Burger is always a crowd-pleaser at my house. Protein Pancake Recipes

I love protein. I just feel so much better when I keep my protein intake high.


I'm always trying to find ways to sneak more protein into my diet. My favorite way to do this is whey protein. I throw it in my morning Coach's Oats, I add it to all my smoothies, and I use it to make protein pancakes. 


I've seen protein pancake recipes that use cottage cheese, but gotta say that kind of grosses me out. I prefer something a little more believably pancakey. I've been playing around with several protein pancake recipe variations the past few weeks and think I have some winners here.


My Original Blueberry Protein Pancake:
  • 1 Scoop Syntha-6 Vanilla Ice Cream flavor
  • 1 tsp baking powder
  • 1 egg
  • 1/4 cup unsweetened vanilla almond milk or water
  • 1/4 to 1/2 cup fresh blueberries
  • Strawberries to top with if desired
That recipe may not be for everyone. I've come to like it, but it's not quite as pancakey (I'm liking my new word) as the next few as it's mostly just whey protein. I did find some whey powders just didn't work for this recipe.

For the rest of the recipes I added some Coach's Oats Pancake Mix and found it did the trick to make these pancakes just right.


Plain Protein Pancake:
  • 1 scoop Syntha-6 Protein Vanilla Ice Cream flavor
  • 1 egg
  • 1/4 cup unsweetened vanilla almond milk
  • 1/2 tsp baking powder
  • 2 Tblsp Coach's Oats Pancake mix
Strawberries n Cream Protein Pancake:
  • 1 scoop Lean Dessert Protein in Whipped Vanilla Cream
  • 1 egg
  • 1/4 cup unsweetened vanilla almond milk
  • 1/2 tsp baking powder
  • 1 Tblsp Coach's Oats Pancake mix
  • 1/2 cup diced strawberries in the mix and more to top with
Blueberry High Protein Pancake:
  • 1.5 scoops Lean Dessert Protein in Whipped Vanilla Cream
  • 1 egg
  • 1/2 tsp baking powder
  • 2 Tblsp Coach's Oats Pancake Mix
  • 1/4 cup water or skim milk
  • 1/4 to 1/2 cup fresh blueberries
My Favorite Protein Pancake:
  • 1 scoop Syntha-6 Vanilla Ice Cream flavor
  • 1 Tblsp Coach's Oats Pancake Mix
  • 1/2 tsp baking powder
  • 1/4 cup unsweetened vanilla almond milk
  • 1/4 cup water
  • 1/2 cup fresh blueberries
  • Topped with 1 tsp real butter
Hubby and My Boys' Favorite High Protein Pancake:
  • 2 scoops Lean Dessert Protein Whipped Vanilla Cream flavor
  • 2 Tblsp Coach's Oats Pancake Mix
  • 1/2 tsp baking powder
  • 1/4 cup milk
  • 1 egg
  • 1/2 cup fresh blueberries
Most of these I make for myself in the morning as one big pancake in a small skillet. You could however make several smaller ones if you'd like or double and triple the batches for more people. If the batter seems too thick add a tablespoon or so of water. I always use a cooking spray to keep them from sticking. Also, you can substitute egg whites for the egg to make them leaner, but I think the consistency is better with the egg. And of course you can omit the blueberries, we just love blueberry pancakes.


I've listed the protein powders I used in each recipe, you can try whatever your favorite brand is. I'm working on a series of reviews for protein powders, meal replacements, etc, so I have a ton of different kinds around right now. I have definitely noticed that some brands work better than others for these.

    Weve already established I LOVE me some coachs oats (never tried the pancake mix) and some protein pancakes.
    Ive been stuck in a rut w/my recipe though (beaters, oats, cottage cheese, fruit, flax seed, some fiber one :))---so thanks for this!

  2. Nom nom nom nom! I am a pancake waffle nut! I have Eggos almost every morning (with sugar free syrup so it's only about 240 cals). But my faves for breakfast with added protein oh ya I'm there!

  3. So true, i likewise feel so much better when I keep my protein intake high. Thus it boggles my mind why I give in at times to carb temptations when I know I wont feel so good about the decision in an hour or so. Imperfect we are.

30 Easy Prep and Pack Whole30 Lunch Recipes

The Whole30 Program is amazing. I highly recommend it. Every time I've done a Whole 30 I have felt AMAZING by the end. It's a very empowering experience. It is not however an easy one. Mostly because the food prep can take much more time if you're used to grab and go options. A little planning ahead and you can definitely make it through the 30 days. When it comes to Whole30 lunches, 3 things worked best for me: Quick and easy salads. Prepping food on Sunday. Cooking too much at dinner and eating leftovers for lunch the next day. I'm always playing around with easy snack recipes for my paleo kiddos. This Paleo Energy Bar Recipe in many incarnations is our go-to! It takes no time at all to whip a batch up and the kids love them. They're not only paleo, but also vegan, gluten-free, grain-free, soy-free, and dairy-free. Plus, I mean... there's chocolate. ;) Just 4 ingredients! Paleo Energy Bars Ingredients 1 cup Whole Natural Almonds 12 to 14 Organic Medjool Dates , de-pitted 1/2 of a Alter Eco Chocolate Dark Blackout 85% 1/4 cup Raw Pumpkin Seeds Directions Pulse the almonds in food processor until you get small bits, but not paste. Empty into mixing bowl. Do the same with the dark chocolate. Process the dates in the food processor until smooth. They will tend to come together in a ball. Add to nut/chocolate mixture. KETO Cocktails: The Lemon Drop

I love a good glass of red wine now and then, I mean it's practically a health food, right? ;) But sometimes I just want a cocktail. I'm all for moderation and having a drink now and then, but I'm just not down with the calorie, carb, and sugar counts of some of my favorites. Seriously, have you ever looked them up? Eek. OK, I know I've been on quite the low carb pancake tangent lately, but THESE! Seriously, these are yummtastic. Yummazing? Ya, they're really good.
