Since going Paleo my family has fallen even more in love with our grill. Paleo and grilling just work well together. The past couple of years I've even been stepping outside my grilling comfort zone more and more. Grilling things I'd never thought to have grilled before and trying new flavor combinations. I have to say I'm pretty thrilled with the results of most of my flavor experiments. In the past I'd never have thought to grill fruit, but it's amazing. Grilling fruit and adding it to traditionally savory dishes? Brilliant. Oh yes, and? New rule: every burger recipe for the rest of forever must contain grilled pineapple. Since going Paleo I've tried everything in my coffee and loved nothing.
Someone suggested I google: Primal Coconut 'Crack' Creamer. This is what I came up with: Original recipe.
I altered it a bit because the canned coconut milk (I think it's the guar gum) was bothering me and I'm doing NO sweeteners this month (nope, not even stevia).
My Recipe:
1 cup water
3 tsp Tropical Traditions Coconut Cream Concentrate
1 Pasteurized Egg
2 Tablespoons Tropical Traditions Coconut Oil (melted)
1 tsp Organic Vanilla Extract
1 tsp Cinnamon
Dash Nutmeg
Throw everything together in the blender (or use a hand mixer). Mix well. Refrigerate.
Mine turned out a little runnier than the recipe I saw online, but it's yummy! It separates a little in the refrigerator, I just stir it up each time before using. I'm a happy coffee loving paleo girl now ;)

ReplyDeleteI drink coconut milk instead of milk these days (diluted so it fits my caloric daily schedule), but once in a while, I like to make zucchini pasta alfredo, and I want to try this for that creaminess, fewer calories than cream from a cow. :D
When I do want an iced special treat, I just use some leftover breakfast coffee over ice with half n half n cinnamon. But that's hardly Paleo. ; )
Interesting recipe. I hope some others chime in on how it worked for them. I dont' do raw eggs, though...always get diarrhea, even if the eggs are "soft" in the yolk. OH, well.
This looks like a very yummy, healthy alternative to the things readily available on the store shelves.
