I've been working hard to get my protein up lately. That seems to be an ever present refrain with me! Here's a fact though: I do better when trying to lose weight when I up my protein consumption. (LCPC diet anyone?) AND when I'm lifting heavy, and when I'm building fitness, and I just feel better, AND...seriously note to self, eat more protein! Bueller... I wander off and always wind up right back here.
So, again I'm working on protein centered recipes! Lately, it's been these on repeat...
Sweet Cinnamon Protein Pancake Recipe
Ingredients
2 eggs
1 1/2 scoops Cinnamon Cereal Protein Powder (that's the link on Amazon, you can get it straight from the company, here)
1 Tablespoon Keto Creamer (see notes)
1/8 teaspoon aluminum-free baking powder
1/2 teaspoon organic Saigon cinnamon (optional)
1 packet Truvia (optional)
1/2 teaspoon ghee for the skillet

- I use the Keto Creamer because I always have it on hand and think it's fantastic in these. Lots of healthy fats in there. You can also use macadamia oil, avocado oil, or melted ghee. I haven't tried melted coconut oil, but if that's what you've got, give it a whirl.
- The cinnamon and Truvia are optional, I often leave them out. If I'm craving a sweet, yummy treat I definitely add them in. Try it both ways!
- I've only tried these with this protein powder, it's hands down my all-time favorite. I can't say how they will turn out with other brands. The protein powder really does make a difference in protein pancakes. Some brands will yield really dry, NOT tasty results.
- You can make several small pancakes as shown (the pics are a triple recipe to make a stack), but let's be real, I'm usually impatient and just make one giant pancake. It's a little tougher to flip that way; you really have to make sure it's set enough to flip
These are very low in carbs and definitely high in protein. I have them quite often and love them. Currently I'm aiming for about 500 calories and 30-50 grams of protein per meal and these fit perfectly into my day. I usually eat them plain without butter or sugar free syrup (though I occasionally add these for a treat).
