Paleo Week 3 Weigh In

As usual, I'll just start with the numbers. My results on the Paleo diet so far:

I am baffled by my results (physical and otherwise) so far with eating Paleo. Weight loss has been only 1 pound total in 3 weeks, but I am losing inches like mad! I can feel it too. I feel thinner all over. My clothes are lose. My stomach is noticeably smaller! I've never experienced anything like this. Normally (for me) the scale and inches play nice. It's a good thing I did measurements as well as using the scale.

I enjoy this DVD. I really love the versatility it offers. You can do a quick 10 minute ab routine on top of any other workout. Paleo Friendly Flavored Coffee Creamer Recipe

Since going Paleo I've tried everything in my coffee and loved nothing. 

Someone suggested I google: Primal Coconut 'Crack' Creamer. This is what I came up with: Original recipe

I altered it a bit because the canned coconut milk (I think it's the guar gum) was bothering me and I'm doing NO sweeteners this month (nope, not even stevia).

This recipe is sweetener and guar gum free.

My Recipe:
1 cup water
3 tsp Tropical Traditions Coconut Cream Concentrate
1 Pasteurized Egg
2 Tablespoons Tropical Traditions Coconut Oil (melted)
1 tsp Organic Vanilla Extract
1 tsp Cinnamon
Dash Nutmeg
Throw everything together in the blender (or use a hand mixer). Mix well. Refrigerate.

Mine turned out a little runnier than the recipe I saw online, but it's yummy! It separates a little in the refrigerator, I just stir it up each time before using. I'm a happy coffee loving paleo girl now ;)

Starting to see things move in the right direction. One pound down and down a little in my measurements. Glad to see it.

I am starting to realize that Paleo means a lot of different things to different people. Not wildly different, but it can get a little tough when looking for what exactly to tweak to get better results. I'm thinking I should have picked a specific book (I'm liking Robb Wolf's best) to follow for this month. For instance fruit, there are differing opinions on how much someone trying to lose weight on Paleo should eat. The same with nuts and even fats. Depending where you look you will find s…

Paleo Week 1 Check In

Exactly the same. The .1 difference on the BF monitor is nothing, readings on that can vary. Normally I might be discouraged, disappointed, or annoyed, but I'm not. I knew I hadn't lost anything this week, but honestly, from the amount of nuts and fruit (along with all the other yummy foods) I had over the weekend and all week long really, I would normally have expected a gain. I'm focusing on the positive, changing a few things this next week, and moving on.
What I'm loving about Paleo so far: Not having to count calories or track obsessively. Love this. Mentally this is priceless to me. I am tracking via my daily vlogs on Adventures in Tracking, but that's it. I have no idea how many calories, carbs, or protein g…

The Paleo Diet Experiment Starting Stats

Today is Day 1 of my Paleo Hype or Help experiment, and I have to say I'm pretty excited to go Paleo for a month. I feel very prepared and ready to make it a fun month (or longer, who knows?). I LOVE trying something new. First, my beginning stats:

I've back-slid a tiny bit the last week. It's been hot, I've been busy, blah blah I've been making excuses to myself. Enough. I am excited to have a little re-set here. My meals are planned, my cupboards are filled with healthy Paleo foods, I'm ready!

KETO Cocktails: The Lemon Drop

I love a good glass of red wine now and then, I mean it's practically a health food, right? ;) But sometimes I just want a cocktail. I'm all for moderation and having a drink now and then, but I'm just not down with the calorie, carb, and sugar counts of some of my favorites. Seriously, have you ever looked them up? Eek. So, I've set to work at converting my favorite cocktail recipes to be more keto diet friendly!

The first cocktail recipe I'm tackling is the keto lemon drop. I used to love these, but haven't had one in years because of the sugar in them. In my early twenties I had a friend who used to make them for me all the time. We would have a shaker full of these, a good dinner, and a chick flick on a weeknight, it was kind of bliss. Her recipe called for so. much. SUGAR though! Looking back I think she may have used a wee bit more sugar than most, but they were really good.

Paleo Smoky Grilled Pineapple Burgers

Since going Paleo my family has fallen even more in love with our grill. Paleo and grilling just work well together. The past couple of years I've even been stepping outside my grilling comfort zone more and more. Grilling things I'd never thought to have grilled before and trying new flavor combinations. I have to say I'm pretty thrilled with the results of most of my flavor experiments. 

In the past I'd never have thought to grill fruit, but it's amazing. Grilling fruit and adding it to traditionally savory dishes? Brilliant.

Oh yes, and? New rule: every burger recipe for the rest of forever must contain grilled pineapple. OK, maybe more of a guideline. It's a seriously delicious combination though.

OK, I know I've been on quite the low carb pancake tangent lately, but THESE! Seriously, these are yummtastic. Yummazing? Ya, they're really good. They just might be my favorite recipe I've ever done. Ever. OK, that might be my paleo apple crisp recipe, but that's not low, I wonder if I could tweak that low carb...

Keto Coffee Cake Mug Cake

Dairy-free keto has been pretty seamless for me. Well... almost. I miss my keto pancake recipes. Which ALL contain cream cheese. So bummer. I mean, one can only have omelets for breakfast so many times.
In looking for something delicious to replace these with I've started playing around with keto mug cake recipes. Yes, you can look forward to a deluge of about 5 million and 3 of those variations in the near future. ;)
This recipe was an accident. I've been working on chocolate variations the most. For obvious reasons. So much so that I ran out of cocoa powder. I started making a chocolate mug cake the other day and when I reached for the cocoa powder there was none. Oops. 
So, after some digging I found cinnamon and thought, hmm why not?
Why not indeed! This Keto Coffee Cake Mug Cake is my new favorite keto breakfast. It's quick, easy, and completely delicious. With only 7 grams total carbs and 320 calories, I confess I have one most days for brekkie.

Keto coffees are a staple in my daily ketogenic diet lifestyle. I have an average of 4 a day and mix it up quite a bit. You know me and my coffee; you should see my counter top full of keto products and concoctions I've built up. I just love trying and combining them for new coffee recipes. I have gone back and forth with low carb since I was 24. I feel better when eating keto and I definitely have good progress with weight loss when I eat that way, but it can be a challenge to stick with. Easy Paleo Mashed Sweet Potatoes

Growing up the only encounter I had with sweet potatoes was at Thanksgiving dinner. I hesitate to even call them sweet potatoes though. They were more like sugar coated sugar, with a side of sugar. Seriously!
The recipe was to coat a baking dish in margarine, add diced sweet potatoes, top with more margarine and a healthy heaping of brown sugar. Bake. And then? At the end you top the whole thing with a bag of marshmallows and bake again.
Blech! Needless to say I was never fond of sweet potatoes.
