Since going Paleo my family has fallen even more in love with our grill. Paleo and grilling just work well together. Dairy-free keto has been pretty seamless for me. Well... almost. I miss my keto pancake recipes. Which ALL contain cream cheese. So bummer. I mean, one can only have omelets for breakfast so many times.

This recipe was an accident. I've been working on chocolate variations the most. For obvious reasons. So much so that I ran out of cocoa powder. I started making a chocolate mug cake the other day and when I reached for the cocoa powder there was none. Oops.
So, after some digging I found cinnamon and thought, hmm why not?

This quick and easy KETO Coffee Cake Mug Cake recipe will quickly become your new favorite keto breakfast option!
ingredients:
- 3 Tablespoons almond meal
- 2 packets Truvia
- 1/2 teaspoon Organic Saigon Cinnamon
- 1/4 teaspoon aluminum free baking powder
- 2 egg yolks
- 1 Tablespoon hot water
- 1 Tablespoon melted organic raw cacao butter
- 1/8 teaspoon organic vanilla extract
instructions:
- Add all ingredients to an 11 ounce (or larger) microwave safe mug and stir well.
- Microwave for 80 seconds.
- Let cool a bit. It will be hot!

I really prefer the raw cacao butter (or cocoa butter, same), but yes you can use melted coconut oil here.
